I am not a morning person.
So making a hot breakfast first thing in the morning isn’t likely to happen. Unless it’s already made ahead, and all I need to do is heat it up. That’s why this make ahead apple cinnamon oatmeal is so great.
It doesn’t hurt that it’s easy, tasty, and full of goodness, either! Plus, it’s vegan and vegetarian! If you make it with gluten-free oats, it’s even gluten free.
I love being able to throw this together in the evening and wake up to a the warm, luscious smell of warm oats, apples and cinnamon.

Apple Cinnamon Steel Cut Oats
This recipe takes only about 10 minutes in the evening to prep, and another 10 to heat up in the morning.
Here’s what you’ll need for Apple Cinnamon Steel Cut Oats
- 4 cups water
- 1 1/4 cups steel cut oats
- 1/4 teaspoon salt
- 2 medium apples, cored and diced
- 2 teaspoons cinnamon
- 2 1/2 tablespoons maple syrup
- 1 teaspoon vanilla extract
Directions
Core, peel and then chop the apples.
Bring water to boil in a medium pan over medium high heat.
Add oats, salt, apple, cinnamon, vanilla and maple syrup. Boil for five minutes, stirring occasionally.
Remove pan from heat.
Cover and refrigerate overnight.
In the morning, heat pot over medium heat to warm through.
Top with fruit, nuts, or additional cinnamon and maple syrup, if desired.

It’s better to use raisins or dates rather than brown sugar as a sweetener. Date sugar, pulverized dates still has fiber, it’s a whole food and actually healthy. Why do you use butter and canola oil? The rape seeds are probably #GMO and the butter and milk is probably from an animal that eat #GMO corn and GMO soy. You don’t need milk, water works great. I love making oatmeal in the crock pot. I always make it vegan.

Ah, as far as using butter, I do have to admit that my attitude to butter is like Julia Child’s “With enough butter, anything is good.” LOVE butter.
